With its herbs, edible flowers, and seasonal fruit and vegetables, this unassuming haven, cultivated using permaculture, inspires the restaurant’s cuisine every day.
A nurturing land through permaculture
At the heart of Ar Men Du, the garden is much more than just a place for growing crops: it is a living ecosystem, designed and maintained according to the principles of agroecology. Claire, our passionate permaculturist, brings all her expertise as a gardener and botanist to bear here.
As a member of the Réseau Paysans de Nature and Bretagne Vivante, she cultivates this space with an approach that respects all living things, promoting biodiversity and natural balance.
Here, nature sets the pace. The garden evolves, transforms and renews itself with the changing seasons, without the use of pesticides or chemicals: just the soil, the sun, the rain and constant care for all living things.
The garden is also managed using a mixed approach: some areas are carefully tended, whilst others are deliberately left to grow wild in order to preserve natural habitats, encourage biodiversity and allow local flora and fauna to thrive freely.
Herbs from near and far, fresh greens, edible flowers, and seasonal fruit and vegetables all thrive here in harmony. From rosemary to wild fennel, from nasturtiums to heirloom beetroot, each variety is chosen for its rich flavour,
its beauty, and its ability to flourish in our coastal environment.

She shares the principles of permaculture, the diversity of the flora and fauna, and the inspiration that springs up every day from the soil to the plate.

Every day, chef Jérôme Gourmelen and his team walk through the garden to gather nature’s finest bounty.
Fresh flowers, young shoots, seeds and vegetables form the basis of a creative, colourful cuisine deeply rooted in the Breton terroir.
The harvests inspire the moment, fuel creativity, and bring to life dishes that are vibrant, sensitive and ever-evolving.
But the Ar Men Du garden is not limited to the kitchens. It is a recurring theme that runs through our guests’ entire experience. In the dining room, our teams love to showcase the garden’s bounty by offering you bespoke herbal teas — picked that very day and prepared just before serving. A moment of tranquillity and reconnection, like a botanical extension of your meal.
The garden is also a source of inspiration at the bar. The herbs and flowers we harvest are turned into subtle, fragrant homemade syrups, which you’ll find in our non-alcoholic drinks. Every sip is a nod to the surrounding nature, a way to enjoy the garden in a different way.
Here, nothing goes to waste; everything is put to good use, and every ingredient we harvest finds its way onto your plate, into your cup… or into your glass. It’s a way of fully bringing to life our commitment to sustainable, authentic and locally rooted cuisine.
